Barbacoa Turkey Fajita Quesadilla

Directions

  • In a sauté pan, heat up red peppers, yellow peppers and red onions together with a small amount of canola oil.
  • In a bowl, mix barbacoa sauce and JENNIE-O® VIP Turkey Breast Roast B/L FC S/O.
  • Toast tortillas on a medium heat flat top for 2 minutes.
  • Flip tortillas and cover each one with 1/2 cup of Jack cheese.
  • On one tortilla, spread out the peppers, onions and the turkey barbacoa mix.
  • Allow to cook for 2-3 minutes, or until Jack cheese is melted.
  • Take the tortilla with only Jack cheese and put it on top of the other tortilla, cheese side down.
  • Cut and serve hot.

1/2  tbls Red onions, julienned ?"
1  tsp Canola oil
1  tbls Barbacoa sauce
3  oz VIP TURKEY BREAST ROAST B/L FC S/O
2  each Tortilla, 6" round
1  cup Jack cheese
