  • In large skillet, heat oil over medium-high heat. Add onion, red and green peppers. Cook 5 minutes or until softened, stirring occasionally; set aside.
  • In same pan, cook hashbrowns over medium-high heat 10 to 15 minutes or until golden brown, stirring occasionally. Return pepper mixture to skillet.
  • Cook links as specified on the package. Always cook to well-done, 165 degrees, as measured by a meat thermometer. Cut sausage into 1-inch lengths. Add to skillet.
  • Add chipotle chilies and spinach. Stir to combine. Sprinkle with cheese. Stir to combine. Remove from heat. Drizzle lime juice over avocado. Pile avocado in center of skillet. Scatter with cilantro leaves.

1  T Lime juice
1  Each Avocado, diced
  Cilantro leaves
