  • Break up the turkey tinga and divide evenly in 12"x20"x2" pans.
  • Add the tomatoes to the turkey mixture. Heat in a 350°F oven for approximately 30 minutes or until the mixture reaches an internal temperature of 165°F as measured by a meat thermometer.
  • Cut the peppers and onions into strips. When the turkey mixture has reached 165°F, as measured by a meat thermometer, add the peppers and onions and cook an additional 10-15 minutes. The peppers and onions should be hot and crunchy.
  • Heat tortillas until warm and soft. Portion 6 oz. (3/4 c.) turkey tinga mixture on each tortilla.
  • For preparation by a food preparation establishment only, according to the food code or equivalent.
  • Serving Suggestion: Serve with shredded lettuce, cheese, salsa and jalapenos.
