Brown Sugar Turkey Pancake Sandwich

Bourbon Maple turkey wrapped in a warm pancake with egg and cheese.

Serves: 8


  • Mix together pancake ingredients and let rest refrigerated for 15-20 minutes to soften the oatmeal. Pour batter on flat grill to make 3" pancakes. Keep warm.
  • Thinly slice turkey and brown on flat grill. Scramble eggs.
  • Put scrambled eggs, 1 slice cheese and 4 oz. turkey between two warm pancakes so the cheese melts. Serve.
  • Makes approx. 8 sandwiches.

8  Slices American Cheese, 3" square slices
8   Eggs
1  Cup All Purpose Flour
1  Cup Oatmeal
2  tsp Baking Powder
2  tsp Sugar
1  tsp Salt
2   Eggs
1 1/2  Cups Whole Milk
1/4  Cup Oil
