The Big Easy On SourDough French Toast

The Big Easy never tasted so good. Start with thick cut sourdough bread, dipped in a sweet vanilla scented custard, stacked orange glazed Canadian style turkey ham along with a iron skillet fried egg topped with blackberry-maple syrup.

Serves: 1


  • Combine two eggs, vanilla and sugar and mix well. Slowly pour in the flour and whisk well until smooth. Let batter sit for ten minutes before use. Dredge the toast in the batter and make sure it is evenly coated.
  • Melt the butter and cook the French toast until golden brown and crispy, then remove from heat.
  • Layer the turkey ham on a sheet tray with parchment paper and glaze the ham with the orange marmalade. Place in a 325°F oven until lightly browned and heated to 140°F as measured by a meat thermometer.
  • Fry remaining egg.
  • Arrange the turkey ham in a circle in the center of the plate; stack the French toast on top of the ham, and top with fried egg.
  • Purée the maple syrup and fresh blackberries and drizzle around the plate and on top of the French toast.

2  Tbsp Orange Marmalade
2  Slices Sourdough Texas Toast
3   Eggs
4  Tbsp Sugar
1  tsp Vanilla Extract
2  Tbsp All Purpose Flour
1  oz Blackberries
2  oz Maple Syrup
2  Tbsp Butter
