Almond Crusted Filets with Orange Vanilla Beurre Blanc

Directions

  • Orange Vanilla Beurre Blanc: Heat wine and shallot in a medium saucepan over medium-high heat until wine has almost completely evaporated, about 10 minutes. Add heavy cream and orange zest. Boil until mixture reduces to slightly less than 1 cup, about 8 to 10 minutes. Remove from heat. Whisk in butter until sauce is creamy and emulsified. Pour through a fine strainer and whisk in vanilla and salt. Serve immediately.
  • Almond Crusted Turkey Filets: Lightly season the turkey filets with salt and pepper. Set up a dredging station by adding the flour in one medium-size bowl, the eggs with 1 tablespoon of water, lightly blended, in a another medium bowl, and then the almonds, breadcrumbs, parmesan and a pinch of salt and pepper in a third medium bowl. Coat each filet first with the flour, shaking off excess, and then dipping into the egg bath, shaking off excess, and then coating with the almond mixture. Let filets rest for about 5 minutes while you heat the oil. In a large skillet, heat the olive oil over medium-high heat until just starting to smoke. Add the filets and cook until golden brown on each side, about 2 minutes per side, and until turkey is cooked to well-done, 165°F as measured by a meat thermometer. Remove from skillet.

2  lbs ALL NATURAL TURKEY BREAST STEAK NO SALT ADDED 4 OZ
  Kosher salt and freshly ground black pepper
1/2  cup all-purpose flour
2   eggs
1  cup almonds, sliced and processed in a food processor
1  cup panko breadcrumbs
1/4  cup parmesan cheese
1/4  cup olive oil
1/2  cup white wine- Orange Vanilla Beurre Blanc
1   medium shallot, finely chopped- Orange Vanilla Beurre Blanc
1  cup heavy cream- Orange Vanilla Beurre Blanc
1  tsp grated orange zest- Orange Vanilla Beurre Blanc
2  oz unsalted butter, cut into ½-inch cubes- Orange Vanilla Beurre Blanc
1  tsp pure vanilla extract- Orange Vanilla Beurre Blanc
1/4  tsp salt- Orange Vanilla Beurre Blanc
