Banana Oat & Turkey Sausage Pancake Stacker

Directions

  • Combine honey and maple syrup, set aside. In a blender, combine the peeled banana, eggs, oats, baking powder and salt. Allow to blend until the mixture is as smooth as you want it and blended well. Allow the batter to stand for 10-20 minutes until thickened slightly.
  • While batter is resting, heat the turkey sausage patties. Always cook until heated through, 140°F as measured by a meat thermometer. Heat a non-stick frying pan over medium heat.
  • Fry small spoonfuls of the batter until golden brown on both sides. Pancakes should be about 2-3 inches round. Place warm sausage patties in between waffles.
  • Serve with a drizzle of honey maple syrup and bananas.

1/2  teaspoon Baking Powder
  Pinch of Salt
2  Tablespoons Honey
1/4  Cup Maple syrup, plus more for drizzling on top
