Turkey, Bean & Spinach Salsa Soup

Serves: 4

Directions

  • Cook turkey as specified on the package. Always cook to well-done, 165 degrees as measured by a meat thermometer.
  • In large pot, combine turkey, chicken broth, salsa, beans and cheese. Bring mixture to boil; reduce heat to medium-low. Simmer 5 minutes.
  • Add spinach. Cook 1 minute or until wilted. Remove and discard Parmesan cheese chunk. Garnish with fresh parsley.

6  c Low sodium chicken broth
1/2  c LA VICTORIA Thick n' Chunky Salsa
15  oz Can cannellini beans, rinsed and drained
1  each 1-inch chunk Parmesan cheese
8  oz Bag baby spinach leaves
3  T Chopped fresh parsley
