Squash Gnocchi With Turkey Bacon

Serves: 6


  • Toss squash, rosemary, oil and syrup on baking sheet. Roast 45 minutes or until squash is golden and tender, stirring occasionally.
  • In large bowl, toss roasted squash, gnocchi, bacon and pesto until combined. Sprinkle with cheese, if desired.

3  Cups Cubed butternut squash
2  Sprigs Rosemary
1  t Olive oil
1  T Maple syrup
1  Pound Package of prepared gnocchi, cooked according to package directions
1/2  Cup Basil pesto
  Grated Parmesan cheese, if desired
