Directions

  • Place tomatoes in olive oil with Italian herb blend in a small oven safe roasting pan ensuring oil covers tomato completely.
  • Place in 275 degree oven for 1 hour then strain tomatoes. (May use same oil for romaine pesto if desired.)
  • Spread 1 t. of softened garlic butter on one side of each piece of Texas toast.
  • Grill bread on flat top until golden and toasty.
  • Heat fully cooked patty via flat top grill, char grill, convection oven or fryer to 165 degrees F as measured by meat thermometer.
  • Place romaine lettuce, olive oil, mayonnaise, and parmesan cheese in a blender.
  • Blend on high for about one minute until all ingredients come together.
  • Place one piece of toast butter side down and add white burger patty.
  • Spread toast with 1.5 ounces of romaine pesto, top with white turkey patty, and then 1 ounce of confit tomato.
  • Top with another slice of grilled Texas toast butter side down.
  • Spread middle piece of toast with 1/4 ounces of romaine pesto, top with three slices of crispy turkey bacon, and then 1 ounce of confit tomato.
  • Top with another slice of grilled Texas toast butter side up.
  • Place toothpicks in each corner of the sandwich and slice into quarters.

2  oz Garlic Butter
1  cup Tomato concasse
1  cup Canola oil
1  T. Dried Italian seasoning
6  oz Romaine lettuce, only leafy green parts
2  oz Olive oil
1  T. Mayonnaise
4  ounces Parmesan Cheese
