Cajun Style Wrap

Directions

  • In a medium bowl, toss rice with beans, red peppers, and green onions. Make sure to break up any clumps of the rice. Add seasoning. Lay out the wrap bread, layer each with 4 ounces sliced turkey and divide up the rice and bean mixture between the 4 wraps.
  • Spread the rice and beans over the filling, keeping it 2 inches away from the edges. Fold 2 inch flaps on opposing sides of the tortilla, and then roll up from one unfolded edge to the other, keeping a tight grip on the filling and rolling snugly to keep it intact. This is just like rolling a burrito. Wrap the entire sandwich in plastic wrap and refrigerate until ready to serve. Slice in half on a slight diagonal before serving.
  • These can be made a day in advance, and you can add hot sauce if you like, to "kick things up" a bit.
  • To turn this sandwich into a salad, scoop the rice and bean mixture over some salad greens, and top with the turkey cut into strips. You could also stuff the mixture into a bell pepper or a tomato with the turkey mixed into the rice.

2  Cups Cooked, Chilled White Rice
1  15 oz Seasoned Spicy Kidney Beans, undrained
1/2  cup Roasted Red Bell Peppers, diced
4   Green onions, minced
1  tsp Cajun seasoning
4   Red Chile or Tomato Herb Wrap Breads or 12-inch Flour Tortillas
1  Lb JENNIE-O TURKEY STORE® Cajun Style Turkey Breast, sliced
