Quinoa Cobb Shaker Salad

DIRECTIONS

  1. Mix quinoa with broth and water. Bring to boil and cover, reduce heat, and simmer for 15 minutes until cooked. Fluff and cool.
  2. Use 20 oz. shaker cup for each serving. In each cup layer ½ c. quinoa, 1 ¼ c. shredded carrots, 1 ½ oz. diced turkey breast, 1 ½ oz. diced turkey ham, ¼ c. chopped romaine, 3 cherry tomatoes, and ½ oz. cheddar cheese. Keep chilled and hold at 41° F until service.
  3. Serve with 1 oz. Italian dressing.
